Mardi Gras planned for fundraiser

The invitations have been sent for the Jefferson Regional Health Foundation 2012 Mardi Gras Gala on Saturday, Feb. 11, at the Best Western in Festus, but everyone is invited to enjoy a little New Orleans flavor while helping to provide for the healthcare needs of our community.

The annual fund-raiser will feature casino and carnival games, along with “Gumbo Party Music” provided by the band Big Al and the Heavyweights, a New Orleans based show band. Samples of the their music can be found at www.bigal.net. Doors open at 6 p.m.

The five-course Mardi Gras menu offers a real taste of the south. Available appetizers include New Orleans style barbecued shrimp, a mushroom-stuffed puff pastry, and spicy chicken with corn and black bean relish “firecrackers.” The mixed greens salad is topped with Cajun vinaigrette dressing. The entrees include beef tenderloin in Cajun cream sauce and grilled tilapia with Creole seasonings and fresh mango salsa. Side accompaniments include a colorful vegetable medley in traditional Creole seasonings, Louisiana red beans and rice with Andouille sausage, and bayou chicken pasta with diced tomatoes, green onions and Parmesan cheese. A New Orleans bread pudding, topped with sweet bourbon whiskey sauce, will be served as dessert.
