Have you ever looked at a new recipe and instantly knew that it was going to be so good? I got one of those recipes from Norma Stanberry of Arcola, Illinois. She sent a recipe for Cranberry-Pear Crisp. Norma says she found this in a cookbook and made it for Thanksgiving last year. She had intended to send this recipe before Thanksgiving but says it would be “good for Christmas with its beautiful red color.” I love cranberries and pears, so this recipe has to be a winner.

 

 

Cranberry-Pear Crisp

1 cup all-purpose flour, divided

1 cup packed light brown sugar, divided

1/2 cup chopped almonds

4 Tbsp butter, melted

1 lb fresh cranberries

2 pears, peeled, cored, cut into 1/2-inch pieces

Heat oven to 325 degrees. Coat a 9-inch-deep dish pie pan with cooking spray. In a bowl, combine 3/4 cup flour, 1/3 cup brown sugar, and almonds. Stir in melted butter until small crumbs form. Set aside.

In a separate bowl, gently combine cranberries, pears, 1/4 cup flour and 2/3 cup brown sugar.  Transfer to baking dish. Sprinkle with reserved crumb mixture.  Bake until hot, bubbly and lightly browned. Transfer to a wire rack and let cool.

I bet this would be good served warm and maybe with a scoop of ice cream!

There are varieties of pears to pick from, and it’s recommended that you buy Bartlett, Bosc or Anjou for your baking. You should pick pears that are underripe so they will hold their shape better. If the pears are too ripe, they will turn mushy when baked. Underripe pears are firm to the touch at the stem and have a slight aroma.

Did you know that there are over 3000 varieties of pears? The United States is one of the largest producers of pears in the world, and most of them are grown on the West Coast, mostly in Oregon and Washington. Pears can mature on the tree, but they ripen best off the tree. Standard pear trees can grow to 18 to 20 feet tall and 12 feet wide and produce 100 to 400 pounds of fruit per year. It takes a lot of work to grow pears because every single one has to be picked by hand. Pears are very nutritious especially if you eat the peel too, but one medium pear has only 100 calories.
